Prepared in open copper kitchens that show the chefs in action, thin-crust pizzas, homemade pastas, and selections from the grill are as much a signature here as the wine list of over 200 well chosen old and new world wines.

– Carlo Speranza (Restaurant Manager)
joined the Gaia Group’s chic restaurant ISOLA bar+grill as manager when it opened in 2004. He joined from Hong Kong Grand Hyatt hotel, where he managed the signature Italian restaurant, Grissini.
Before arriving in Hong Kong, he worked for six years in England – gaining experience in several of London’s top boutique hotels, including the exclusive Halkin Hotel, Belgravia, renowned for its Michelin star Stefano Cavallini Restaurant. Carlo also worked in two of the capital’s most prestigious hotels, The Dorchester and The Savoy.

an energetic and experienced Italian Chef de Cuisine is now with Isola, demonstrating his brilliant Italian cuisine talent in this theater.
Stretching around the world, Giorgio had been well-equipped with internationalized cuisine knowledge, mastering himself in both traditional & contemporary Italian style cuisine. Giorgio then progressed to The Crow, Viterbo as an Executive Chef and 3 years after, he reached the five-star La Terrazza in Grand Hyatt Shenzhen.
Taking the management role there, Giorgio led the whole restaurant to deliver his best F&B expertise to every food-lover.
